This course is for those with an interest in Cake Decorating, and is the ideal starting point if you would like to gain an introductory qualification in Cake Decorating and achieve a professional looking finish in your work. This course is perfect if you are thinking of setting up your own business or want to further your skills in a new hobby.
The classes will cover the basic skills needed to complete various shaped cakes before enrolling on an accredited course - e.g. City and Guilds Level 1. To prepare for accredited courses there will be some written work to complete each week and you will create a reference guide for yourself detailing how you made each project.
Your Level 1 course will be awarded on completion of the outcomes of the course, listed below:-
By the end of the course you will be able to:
- Create a celebration cake for a client
- Demonstrate how to crumb coat a sponge cake with buttercream
- Accurately describe how to cover a cake with sugarpaste
- Demonstrate how to make a piping bag and pipe a shell border in royal icing
- List three Health & Safety/Hygiene points relating to cake decorating
The course fee includes dummy cakes, boards for practicing, a box to store your cake(s) in, plus various resources i.e. Royal Icing for piping.

Who is the tutor?
About the Tutor: Lyn Pankhurst
Your tutor is Lyn Pankhurst, who has been teaching Sugarcraft since 2000. She is qualified to City & Guilds Level 3 Advanced to include: Royal Icing, Sugarpaste, Chocolate work and Boiled Sugar. Lyn completed her Teaching Certificate (PCET) in 2006 followed by her Foundation Degree in Education and Training in 2010. She has achieved Awards for Outstanding Teaching Learning and Assessment for courses taught at Kent Adult Education.
Lyn has achieved many National and International awards for her Sugarcraft in various exhibitions and competitions including Hotel, Restaurant & Catering Show (Formerly Hotelympia) - Salon Culinaire International 2020 where she received a Silver award for her Floral Wreath.
How will I be taught?
At the start of the course, you will work with your tutor to develop an Individual Learning Plan (ILP) to set out your prior learning and what you want to achieve by the end of the course alongside the learning outcomes listed above. It is vital that you engage with this process to achieve the outcomes and successfully complete the course.
You will complete tasks and assignments according to the course syllabus to successfully achieve the outcomes, with guidance from the tutor.
You will receive initial and ongoing feedback from your tutor. It is key that you also monitor and assess your progress throughout the course, to ensure your learning needs are being met and course and personal outcomes are being achieved.
There is no final exam for this course, Level1 certification is awarded on achievement of the course outcomes listed above.
What do I need to bring with me?
For the first lesson please bring with you:
- Note book and pen, apron
- 1.5 kg White Sugarpaste (also known as roll out fondant - this can be bought from a supermarket)
- A roll of greaseproof paper
If you have any cake decorating equipment please bring with you
