Cake Decorating - NCFE Level 2 Award in Creative Craft

The course will give you the high level of skills and techniques in carving cakes, piping and modeling that you need to make ambitious designs of your own whilst gaining a professional qualification.

You will learn to make wired sugar flowers, decorate tiered celebration cakes and create fun novelty cakes as you acquire your skills. You will have the opportunity to repeat processes to perfect and embed them and will use the skills you are learning to create decoration designs of your own.

You will produce a portfolio of evidence during the course which will give you a reference manual to use in the future. You will also be required to reflect on the pieces you create and assess your progress by answering a couple of set questions about your work with written work being submitted each week.

There is no final exam but at the end of the course you will focus on planning and creating a tiered cake inspired by a theme set by the tutor, ready to exhibit with your fellow students, inviting friends and family to view your work and celebrate your achievement.

The qualification will be awarded after assessment of your completed portfolio by internal and external verifiers. You will be required to meet deadlines at various stages throughout the course, as your work will be assessed at several points.

How will I be taught?

Craft courses provide an opportunity for students to learn and develop skills, techniques and understand how to design for a chosen craft to a higher level. Tutors will use a variety of teaching methods including demonstration, instructions, one-to-one tutorial guidance, group discussions and critiques. It is important to note that craft courses are practical, requiring a degree of manual dexterity. Students will need to participate fully to get the most out of the course. Our courses are taught by qualified and experienced tutors most of whom are practicing crafts people.

There is no formal exam, the portfolio of written work which will give evidence of and explain your practical work, will be assessed throughout the course and your tutor will give you constructive feedback and support to help you achieve the level required.

What do I need to bring with me?

For the first lesson you will need:

-A pen and notebook
-A4 level arch ringer binder folder with dividers
-An apron
-Any cake decorating tools you have

The tutor will discuss exactly what you will be using each week at the first session. There will be a cost for approximately £5-10 each week as you will be asked to bring cakes or dummy blocks to ice. Some weeks the cost will be considerably less.

Please do not purchase any additional equipment until you speak to the tutor during the first session.

What can I do next?

You could progress to a level 3 craft course or a foundation degree.

What do I need to join the course

A secure knowledge of basic cake decorating techniques such as crumb coating, covering with fondant icing, cake carving and modeling with sugarpaste is necessary.
This course is best suited to those who have attended a beginners course previously.

Pre selection testing is required before enrolling to ensure the course is of a suitable level and that we are able to fully support your learning needs.

Students are required to produce a written piece of work as below –,

Write up the method of how you decorated the last cake you created and reflect on what went well and what you could do to improve it.

You will need to allow time each week to complete your written and photographic portfolio submissions, this should take approximately 2 hours per week. You will also need time to gather the materials you need each week, which will often involve baking a cake in advance of the lesson.
