This course will be held at St Faiths Adult Education Centre, Maidstone. Please note, this course will move to our venue at Oakwood House, Maidstone in January 2023.
On this Sugarcraft -- City and Guilds Level 2 Certificate course there will be an emphasis on creativity and individual original design, it will include historical and contemporary design influences. It will also include some basic design principles such as colour, line, texture, shape and form. The course is accredited by continuous assessment and requires commitment to the work as well as allowing at least one day a week to work on tasks at home.
On completion of the course, a successful candidate will receive the following:
City and Guilds Level 2 Certificate in Creative Techniques – (Sugarcraft ) 7159

7159 - 202 Sampling - Design Ideas
7159 - 204 Decorate a Cake with Sugarpaste
7157 - 207 Create a Wired Sugar Floral Spray

Who is the tutor?
About the Tutor: Lyn Pankhurst
Your tutor is Lyn Pankhurst, who has been teaching Sugarcraft since 2000. She is qualified to City & Guilds Level 3 Advanced to include: Royal Icing, Sugarpaste, Chocolate work and Boiled Sugar. Lyn completed her Teaching Certificate (PCET) in 2006 followed by her Foundation Degree in Education and Training in 2010. She has achieved Awards for Outstanding Teaching Learning and Assessment for courses taught at Kent Adult Education.
Lyn has achieved many National and International awards for her Sugarcraft in various exhibitions and competitions including Hotel, Restaurant & Catering Show (Formerly Hotelympia) - Salon Culinaire International 2020 where she received a Silver award for her Floral Wreath.
How will I be taught?
Our City and Guilds courses provide an opportunity for students to learn and develop, design, skills, techniques and to acquire an understanding of a specific craft. Students will also be expected to research and respond to the design aspects of craft. Tutors will use a variety of teaching methods including demonstrations, instructions, one to one tutorial guidance, group discussions and critiques.
At the end of the course a student are expected to complete all the aims of the learning plans:-
Learning plan 1 - Successfully demonstrate Design/ Techniques/Skills relevant to the subject.
Learning plan 2 - Competent application of Design/ Techniques/Skills.
Learning plan 3 - Use work of others to inspire own work.
Learning plan 4 - Demonstrate an understanding of Health and Safety relevant to the subject.
Students will need to look at the work of other craftspeople, artists both contemporary and historical and keep a sketchbook/notebook to record goals, ideas, processes and progress. Students are required participate fully to get the most out of the course. Our courses are taught by qualified and experienced tutors most of whom are practising craftspeople.
Through one to one guidance, group critiques and self-assessment and through the City and Guilds end of project tracking sheets.
What do I need to bring with me?
Please bring to the first session: a notebook and pen, apron, 500g pack of white rollout fondant also known as sugarpaste (can be bought from any supermarket). Small rolling pin, small cranked handled pallet knife, Red Yellow, Blue food paste colours, small pot for water and a paintbrush.
Further materials and equipment will be required throughout the course, the Tutor will give advice when reqired. As with all our courses please do not buy any equipment until you are sure the course is running

This creative techniques qualification from City and Guilds has been designed for students who work or wish to work in cake decorating or for those who are interested in developing skills in cake decoration as a vocational study.
You will sample practical skills of sugarpaste and sugar wired flower techniques, relating to the criteria of the unit, for example: colouring sugarpaste, covering a cake, cutting, wiring and forming components of wired sugar flowers and foliage.
PLEASE NOTE THIS IS NOT A GENERAL BEGINNER'S CAKE DECORATING COURSE, ALTHOUGH MANY BASIC TECHNIQUES WILL BE EXPLORED.
This course is suitable for those with some experience of cake decorating who know the basics of covering a cake with rolled out fondant.
It is important to note that craft courses are practical and require a degree of manual dexterity. If you need to bring a carer with you, or be accompanied by another person, please ask to speak with the Curriculum Leader before you enrol.
