Cake Decorating - Sugarcraft - Mini Cakes - City and Guilds Level 1 Award

This course will be held at Tonbridge Adult Education Centre.

This creative techniques qualification from City and Guilds has been designed for students who are interested in developing skills in cake decoration as a vocational study.

The course requires a display of six co-ordinated mini cakes, using a minimum of two different shaped cakes decorated in sugarpaste and displayed on a sugarpasted board.

You will sample practical skills of sugarpaste techniques, relating to the criteria of this unit, for example: colouring sugarpaste, covering mini cakes, texturing sugarpaste by impression of food safe tools, painting, inlay and individual hand moulded shapes.

Please note this is not a general beginner’s cake decorating course, although many basic techniques will be explored.

In addition to the above a practical assessment is to be completed to a chosen theme, to include researching and developing simple design ideas for use on the sugarpasted cakes, collating and presenting research using visual and written evidence. This may include sketches, collages and colour palettes for design ideas to show the use of colour line and texture. There is no formal written examination.

Approximately 2 hours homework per week will be required to complete this award.

Who is the tutor?

About the Tutor: Lyn Pankhurst

Your tutor is Lyn Pankhurst, who has been teaching Sugarcraft since 2000. She is qualified to City & Guilds Level 3 Advanced to include: Royal Icing, Sugarpaste, Chocolate work and Boiled Sugar. Lyn completed her Teaching Certificate (PCET) in 2006 followed by her Foundation Degree in Education and Training in 2010. She has achieved Awards for Outstanding Teaching Learning and Assessment for courses taught at Kent Adult Education.

Lyn has achieved many National and International awards for her Sugarcraft in various exhibitions and competitions including Hotel, Restaurant & Catering Show (Formerly Hotelympia) - Salon Culinaire International 2020 where she received a Silver award for her Floral Wreath.

How will I be taught?

You will be taught as a small group (maximum 8 students) using a variety of teaching methods including demonstrations, instruction, one to one guidance, and group discussions.

Please let us know if you require special learning support to enable you to take part in the course.

What do I need to bring with me?

For the first lesson please bring with you:

- Notebook and pen
- Apron
- 500g pack of white rollout fondant also known as sugarpaste (can be bought for any supermarket)
- Small rolling pin
- Small cranked handle pallet knife
- Red, Yellow, Blue food paste colours
- Small pot for water
- Paint brush

Any other cake decorating equipment you feel may be useful

Further materials and equipment will be required throughout the course, details will be given when required.
